Loyola House kitchen constantly walks a balance between our desire to keep the cooking as unique as possible and our desire for responsible buying habits. “Variety is the spice of life” they say – but in fact, Canadian winters just don’t naturally provide for a lot of variety of fresh fruits! In keeping with our policy to have our purchasing as sustainable, as local and as ethical as possible, in the new year we will no longer be regularly purchasing fruits from off the continent. We ask your understanding and indulgence as we adjust our menu.
Ontario has wonderful fruit in the summer. In the winter it is pretty much … apples, some pears and more apples. Oranges and grapefruit from Florida are available all winter and Californian pomegranates are just coming into season. These are all great tasting and great for your health. It is not necessary to buy melons from Costa Rica, grapes from Brazil, kiwis from … who knows where! We have been accustomed to serving a heaping platter of fresh, cut fruits at each meal. This will be drastically curtailed. There are other delicious ways to get healthful fruit into your diet though … our citrus-marinated prunes are very popular for breakfast as is applesauce and frozen berries stirred into our (made-in-Mississauga) yoghurt. Our fresh fruit basket will continue to be available 24 hours a day. We will continue to bake with local fruits giving our clients a great excuse to try some house-baked desserts.
We may make an exception for fair trade, organic bananas – partly to encourage better practices in what can be a pretty ghastly kind of agriculture and partly because more doctors are now recommending this easily assimilated source of potassium. This cake was served at the Harvest Feast several years ago. It is very Canadian (apples and maple syrup!) and very rich and fruity … in fact it is more apple than cake!
Maple Apple Cake
6 c flour
1 t baking powder
1 t baking soda
½ t salt
1 t cinnamon, nutmeg, ginger
When thoroughly mixed, add…
4 c grated apple, 2 c apple chunks
3 c veg oil
2 ½ c brown sugar
1 T vanilla
½ c maple syrup
Add wet ingredients to dry, mix gently. Turn out into pans and sprinkle with topping. Bake @ 350° for 40 minutes or until done.
10 T butter
½ c brown sugar
2 t mixed spices
½ c maple syrup
Apple slices and cranberries in an attractive pattern.
